This recipe can be made vegan by substituting margarine for butter, but I'd rather just leave the butter out. Proportions on this are even more "to taste" than my other recipes. This is an excellent recipe to cook as a side dish because it tolerates wide ranges of oven temperatures and cooking times (can be left in oven for a couple of hours after it's done).
Heat oven to 300-400 degrees. Scrub sweet potatoes and slice them two inches thick. Lay in baking dish. Place other ingredients in nuke-proof dish and nuke for a couple of minutes to melt butter, then mix together. Pour over potatoes. Seal tightly with foil or lid. Bake for an hour nominal at 350.
