Catalan Spinach

A local Caribbean restaurant makes something like this, and this is what I came up with before I realized there were tons of similar recipes on the Web. Mine's got a few twists, though, notably the Marsala and the lack of raisins.

Per person:

Heat very large pot with oil/butter to medium-high. Saute Marsala and apricots until liquid almost completely gone. Add spinach, salt, and honey; saute until spinach almost completely wilted. Toss in pine nuts and serve hot.
