Heat a large skillet (cast iron is best) on low-to-medium heat and toast the walnuts a bit (be careful to avoid burning them). Cut the apple into large chunks (I usually quarter the apple and slice it half-to-one inch thick). If the sausage is in links, slice it also half-to-one inch thick.
Remove the walnuts, put the pan on medium-high, and fry the sausage until almost done. Add hot paprika to taste if you want it really hot. Drain the fat and add the butter. Fry the apple with the sausage and sprinkle lemon juice and cinnamon to taste. About a minute before the apples start to get slightly soft, add the honey (so it caramelizes a bit) and the walnuts. Serve hot.
